YIELD: read about 30 cookies PREP TIME: 10 minnutes COOK TIME: 10 minutes



1/2 cup unsalted butter, at room temperature

1 cup packed light brown sugar

1 large egg

3/4 cup mashed ripe bananas (about 2 medium)

1 1/2 teaspoons pure vanilla extract

1 cup pops flour

1 teaspoon baking soda

1 tsp salt

2 tsp ground cinnamon

3 1/4 cup old fashioned oats


Line baking sheets with parchment paper.

From the bowl of a stand mixer fitted with the paddle attachment, or in a large bowl using an electric mixer, beat the butter and sugar till light and fluffy, about 3 minutes.

Scrape the sides of the bowl and mix in the egg until fully incorporated. Scrape the sides of the bowl again and add the skillet and vanilla.

Gently add the bread mixture to the banana mixture and mix until just blended.

Scrape down the sides of the bowl and then stir to recombine.

Use a medium cookie scoop (about 1.5 tbsp ) to scoop the dough onto prepared cookie sheets leaving about 2 inches between each cookie.

Bake in preheated oven for about 9-11 minutes.

Remove cookies from the oven and then lightly press on the shirts of each cookie using the base of a drinking glass. Considering these cookies don't spread much, this can help give them a conventional cookie shape.
